Dayna was so excited about our program that she took the recipes to work and shared them with her co-workers. She works in a pediatric office and took fliers to pass out to parents.

Even though Ashley didn’t cook with me when I came to her house, I know that she is cooking more for her family. She likes the recipes and is cooking more from scratch. Her family is eating healthier and saving money on food.

GJ is 10 years old. This summer he participated with his mom, 3 brothers, 3 cousins and his aunt in summer 4H.
He is a future chef. He enjoys cooking and is very good at it. Just before school started his mom was very busy in the garden. He decided to fix dinner all on his own, without mom even knowing about it.
When he had his pizza in the oven, he went to tell his mom that dinner would soon be ready. She was shocked. She asked, “What did you make?” He replied, “Pizza. Carla taught us how to use yeast and I just followed the recipe she gave us.”
His mom reported that his pizza was better than hers, and he now had the pizza making job in their family.

These 2 guys are handicapped and mentally challenged. They were referred by behavior health. Jacob can cook but is overweight. Saul survives on candy and koolaid. We cooked every time. I often gave the lesson then a recap so they understood. Saul was very nervous at first to be in the kitchen, but after a while, he really enjoyed it, often calling me to remind me of the next day’s cooking item. We made a cookbook with EFNEP recipes, got all their cooking equipment together, cleared out old food, did food safety, menu planning shoppers’ lists. After I graduated Saul, he even surprised me on my birthday by calling me and telling me happy birthday. I think this program helped these 2 guys a lot – they learned to properly measure, cook, clean, and collect recipes and keep them nice.

My name is Guadalupe. I want to say thank you for these classes because I can learn about nutrition. I learned how to read labels. Before these classes, I didn’t know why labels were important. I have high blood pressure, and now I know that I don’t have to buy cans high in sodium or salt. I look for cans with sodium less than 5%; Also I know now that some condiments have sodium too. I started using more fresh herbals after these classes.

I learned with these classes why it is important to take breakfast – also that any food can be breakfast. Before I took these classes, I always prepared egg for breakfast, but now I give fruit with pancakes, quesadillas, etc.

This program has made me more aware of how and what my family eats. We are making a point of eating together as a family and varying the foods we eat.
I have also enjoyed making a new friend in Lisa.
